<p class="wp-block-paragraph"><strong>Thailand &#8211; March 29, 2022:</strong> To celebrate the Thai New Year and welcome international travelers back to Thailand, the Governor’s Mansion in Phuket &#8211; the largest icon of Sino-Portuguese baroque architecture &#8211; will be listed on Airbnb for the ultimate designer stay. Renowned for its magnificent beaches and rich cultural heritage, Phuket has long been an incredible draw for millions of travelers from around the world. The lush tropical island is now leading the way for Thailand’s long-anticipated travel rebound.</p>



<p class="wp-block-paragraph">As the country gears up for its biggest cultural festival, <em style="user-select: auto;">Songkran</em>, one group of four lucky guests will get to soak up the vibrant festivities with an island getaway of a lifetime, only on Airbnb. The majestic Governor’s Mansion will be bookable on <a style="user-select: auto;" href="http://airbnb.com/governorsmansion">airbnb.com/governorsmansion</a> for US$50* (approx. 1,700THB) for a two-night stay from 15-17 April 2022, welcoming overnight guests for the first time in more than 50 years. Bookings open at 8 AM ICT on April 5, 2022. <p class="wp-block-paragraph">Built at the end of King Rama V’s era by successful local businessman Pra Pitak Chinpracha, the 119-year-old Governor’s Mansion welcomed many out-of-town dignitaries and remains one of several neoclassical heritage mansions on Phuket today. The sprawling white and mustard heritage home is located in the historic heart of Old Phuket Town and has been exquisitely restored to preserve its original fixtures, including richly patterned tiles and teakwood floors. Its first floor is now home to the Blue Elephant Restaurant – a Michelin Plate awardee and long-running stalwart of Thailand’s culinary industry.</p>

The stay features statement pieces by Yothaka – widely revered as Thailand’s master of design – in addition to bespoke handcrafted items by up-and-coming designers Kitt Ta Khon, Masaya, Sumphat Gallery, Thaniya, and Mo Jirachaisakul, paired with Phuketian antiques from some of the island&#8217;s most distinguished homes and museums.</p>

You must ensure to roast the ingredients mention above quite gently so that they do not burn. Once done, let it cool and then grind it in the spice grinder to turn it into the powder. After that, add 1/8 teaspoon of freshly grated nutmeg, 1 teaspoon of brown sugar and 1 teaspoon of turmeric powder.</p>



<p class="wp-block-paragraph">Now take a wok, add 2 teaspoons of oil, and heat it on the medium heat. Once heated, add Massaman Curry Paste in it and fry it for 1-2 minutes. Then, add some cinnamon sticks, minced ginger and 1-2 bay leaves.</p>



<p class="wp-block-paragraph">In the meantime, cut 1 kg of boneless chicken into little cubes, put it into the wok and let the chicken cook for 5 minutes. Once the chicken is cooked, stir the fish sauce, peanut butter, brown sugar, tamarind paste, coconut milk and some sliced potatoes. Simmer it for 15 – 20 minutes until the potatoes become tender and then add lime juice in it and cook for another 5 minutes. Once done, serve it hot and enjoy your rainy day.</p>

Phibunsongkhram, also known as Phibun, who became Thai PM in 1938 is belied to have propagated the creation of a new national dish of Thailand, which ultimately resulted in Pad Thai. This is when I heard about a popular saying from famous chef and Thailand native Nick Srisawat, “we try Pad Thai first, because that is a way to judge how good a restaurant is.” And as it turned out, I fell in love with Pad Thai from the very first beginning. I tried varieties of Pad Thai across different regions including the original recipe and one made with Chanburi rice noodles and crushed peanut, bean curd and egg. But the original and traditional one was what I loved the most, and I recommend it to everyone visiting Thailand.</p>



<p class="wp-block-paragraph">Pad Thai is a special and staple street food in Thailand and is sold in city streets as well as in villages. It’s an easy-to-make dish and is usually found in 5 different flavours &#8211; salty, sweet, bitter, sour and spicy.</p>



<p class="wp-block-paragraph">An interesting fact about Pad Thai is that although it is national dish in Thailand, this is inspired from Chinese stir-fried noodle food culture.</p>

<p class="wp-block-paragraph">A curry is regarded as a (generally spicy) sauce to accompany rice or bread. It is usually associated with India, but there are many other Asian countries that are home to their own varieties of ‘curry’.</p>



<p class="wp-block-paragraph">Curry is a staple dish in Thailand and in India. In many homes it is eaten on a daily basis and made from ingredients growing around the house.  It typically contains less protein and is served over rice. It is an economical, healthy part of the Thai diet. </p>

<p class="wp-block-paragraph">Thai cooking is all about balancing hot, sour, sweet and salty. Thai curries range from soupy to slightly stew-like and are ladled over steamed jasmine rice or rice noodles.  They all contain a protein of choice:  chicken, or any other meat, or fruits and vegetables. The most common vegetables included are bell peppers, broccoli, Thai eggplant, green onion, mango, pineapple, pumpkin and squash.  It&#8217;s common for any curry to be garnished with Thai basil or cilantro and chopped or whole &#8211; roasted peanuts or cashews.</p>

<p class="wp-block-paragraph">Green curry can be and tends to be just as hot as red curry, given the fact that green chilies are used in the preparation of the curry paste instead of red chilies.  However, green curry, regardless of the heat, has a definite amount of sweetness associated to it similar to that of palm sugar.</p>

<p class="wp-block-paragraph">Red curry is made from a spicy blend of pounded red chilies, garlic, shallots, galangal root and shrimp paste.  The red curry paste is made using the same ingredients as the above mentioned green curry paste, The only exception is red chilly instead of green. In Thai households, the proportions of the ingredients are adjusted to suit the palate of the family members.</p>

<p class="wp-block-paragraph">Yellow curry paste (similar in appearance to red) is less spicy than other curry pastes.  In addition to coconut milk, coconut cream is sometimes added to yellow curry to make it even richer and creamier. Its hint of sweetness and subtle spice comes from palm sugar and cinnamon.  It gets its color from yellow chilies along with the vibrant yellow spice known as turmeric.</p>



<p class="wp-block-paragraph">Curry pastes are traditionally made from scratch in Thai kitchens using a mortar and pestle to pulverize the ingredients, which extract the essential oils and fully bring out the flavors. A food processor or a blender is not a viable substitute for this ancient tool.  Nowadays, most cooks (Thai cooks included) purchase high-quality curry pastes from their Asian market.  </p>



<p class="wp-block-paragraph">Remember, the color of the curry simply denotes which kind of chilies you should use (i.e. green curry uses green chilies etc.) and their respective spice levels. Green being the hottest; one should be careful while experimenting with it.</p>
