<p class="wp-block-paragraph">Take a bowl, boil 3 cups of water, and add lemongrass, ginger, lime leaves and a handful of shrimp or prawn. Also, add tamarind paste, chilli peppers, tamarind tendrils (optional) and Thai chilli paste. Boil the shrimp/ prawn to an extent when the water turns into the orange tint. Then, reduce the heat to medium and add lime juice, fish sauce, mushrooms, and sugar in it. Stir the mixture until the sugar liquefies. Once done, pour the soup into bowls, garnish it with cilantro or coriander and serve it hot.</p>

<p class="wp-block-paragraph"><strong>Massaman Curry Recipe</strong></p>



<p class="wp-block-paragraph">The first and foremost step to follow to cook Massaman Curry is to prepare the Massaman Curry Paste by dry roasting 5-6 dry red chillies, 1 teaspoon of cumin seeds, 4-5 cloves, 1 teaspoon of coriander seeds, and 4-5 cardamom pods into a frying pan. You must ensure to roast the ingredients mention above quite gently so that they do not burn. Once done, let it cool and then grind it in the spice grinder to turn it into the powder. After that, add 1/8 teaspoon of freshly grated nutmeg, 1 teaspoon of brown sugar and 1 teaspoon of turmeric powder.</p>



<p class="wp-block-paragraph">Now take a wok, add 2 teaspoons of oil, and heat it on the medium heat. Once heated, add Massaman Curry Paste in it and fry it for 1-2 minutes. Then, add some cinnamon sticks, minced ginger and 1-2 bay leaves.</p>



<p class="wp-block-paragraph">In the meantime, cut 1 kg of boneless chicken into little cubes, put it into the wok and let the chicken cook for 5 minutes. Once the chicken is cooked, stir the fish sauce, peanut butter, brown sugar, tamarind paste, coconut milk and some sliced potatoes. Simmer it for 15 – 20 minutes until the potatoes become tender and then add lime juice in it and cook for another 5 minutes. Once done, serve it hot and enjoy your rainy day.</p>
