Moving to Thailand means facing a menu that ranges from gentle coconut soups to dishes that can genuinely catch you off guard. There’s no single official heat scale here, restaurants and street stalls each have their own sense of “medium,” which is part of why so many newcomers either play it too safe for months or order something ambitious on day one and regret it immediately.

This list works through ten essential dishes, starting mild and building up to genuinely fiery. Consider it a roadmap for pacing your spice tolerance the smart way, one dish at a time, rather than diving straight into the deep end.

Why Thai Spice Levels Are So Inconsistent

Before getting into the list, it helps to understand why “medium” at one stall can feel nothing like “medium” at another. Thailand has no standardized heat scale the way some cuisines do. Some restaurants use a numbered system, others stick to mild-medium-hot labels, and street vendors often just ask how many chilies you want and let you hold up fingers to answer.

Regional cuisine plays a role too. Northern Thai food tends to lean on herbs rather than chilies, making it a gentler starting point, while Isaan food from Thailand’s northeast is generally considered the country’s spiciest, built around fresh bird’s eye chilies, lime, and fermented fish sauce. Central Thai dishes, the ones most visitors encounter first in Bangkok, usually sit somewhere in between, since coconut milk, sugar, or tamarind often soften the chili heat.

With that context, here’s how ten popular dishes actually stack up.

1. Khao Man Gai — Spice Level: 1/5 (Mild)

Thailand’s answer to Hainanese chicken rice. Silky rice cooked in chicken fat and broth, tender poached chicken, and a light ginger-garlic dipping sauce served on the side. It’s comforting, simple, and about as safe a first bite into Thai food as it gets, since any real heat is entirely optional and comes from a side sauce you control yourself.

2. Pad Thai — Spice Level: 1/5 (Mild)

The dish that introduces most people to Thai food in the first place. Stir-fried rice noodles, tamarind, egg, peanuts, and a choice of shrimp or chicken come together in a dish that’s sweet and tangy far more than spicy. Any heat typically comes from optional dried chili flakes on the table, not the dish itself.

3. Khao Soi — Spice Level: 2/5 (Light)

A Northern Thai specialty built around a coconut curry broth, soft egg noodles, and a handful of crispy fried noodles on top for texture. Northern cuisine generally relies more on herbs than chili, and khao soi follows that pattern. Expect gentle warmth rather than a real burn.

4. Massaman Curry — Spice Level: 2/5 (Light)

Slow-cooked, rich, and slightly sweet, seasoned with warm spices like cinnamon and cardamom rather than raw chili heat. Usually made with beef or chicken, potatoes, and peanuts, it’s often cited as one of the gentlest curries on a Thai menu, a solid entry point before trying spicier options like green or red curry.

5. Tom Kha Gai — Spice Level: 2/5 (Light)

A coconut milk soup built on galangal, lemongrass, and lime leaves, with chicken and mushrooms. It’s creamy and deeply fragrant, with just enough chili to notice without it taking over. Many people order it specifically to balance out a spicier dish on the same table.

6. Pad Kra Pao — Spice Level: 3/5 (Medium)

Widely considered one of the most-eaten dishes in the country, this Bangkok lunch staple stir-fries minced meat fast and hot with holy basil, garlic, and chilies, typically served over rice with a fried egg on top. This is where real heat starts to show up on this list, though most restaurants offer adjustable spice levels, and street stalls will usually accommodate a request for less chili.

7. Tom Yum Goong — Spice Level: 3/5 (Medium)

Thailand’s most internationally recognized dish, and it earns that reputation. A hot and sour shrimp soup built on lemongrass, kaffir lime leaf, galangal, and chili, it hits from multiple directions at once: sour, salty, and spicy in the same spoonful. Central Thai cooking tends to balance heat with other flavors, and tom yum is a good example of that balance still landing with real punch.

8. Som Tam — Spice Level: 4/5 (Hot)

Green papaya salad, pounded fresh to order in a mortar with fish sauce, lime, palm sugar, garlic, and a serious amount of chili. As an Isaan dish, it inherits that region’s reputation as Thailand’s spiciest cuisine, and most vendors don’t go easy on the heat by default. If you want to survive the first bite, ask for “mai phet” (not spicy) or hold up one finger to signal how many chilies you’d like.

9. Larb — Spice Level: 4/5 (Hot)

A minced meat salad tossed with lime juice, fish sauce, toasted rice powder, and fresh herbs. Another Isaan staple, it looks deceptively casual on the plate, more like a side dish than a main, but the combination of dried and fresh chili builds a complex, layered heat that sneaks up a few bites in.

10. Goong Chae Nam Pla — Spice Level: 5/5 (Extreme)

Raw shrimp served in a sharp, spicy fish sauce mixture loaded with raw garlic and sliced chili. This is squarely in heat-enthusiast territory and not built for a first-timer’s palate. If you’ve worked through the rest of this list and are still craving more, this is the dish that tests it.

How to Order Your Spice Level Like a Local

A few phrases make a real difference when ordering, especially at street stalls where the cook is working right in front of you:

“Mai phet” — not spicy

“Phet noi” — a little spicy

“Phet mak” — very spicy

Adding “krap” (for men) or “ka” (for women) to the end of any phrase is a small politeness that’s widely appreciated. At most som tam stalls, you can also just hold up fingers to indicate how many chilies you want, since the dish is typically pounded fresh per order anyway.

Frequently Asked Questions

What’s the mildest Thai dish to start with?

Khao Man Gai and Pad Thai are both considered the safest starting points, since neither relies on chili heat for its core flavor, and any spice is optional and added separately.

Is Thai food always this spicy?

No. Central Thai cuisine, which is what most people encounter first in Bangkok, tends to balance chili with coconut milk, sugar, or tamarind. Isaan food from the northeast is generally the spiciest regional cuisine, while Northern Thai food leans more on herbs than heat.

How do I ask for a dish to be made less spicy?

Say “mai phet” (not spicy) or “phet noi” (a little spicy) when ordering. Most restaurants and street vendors are used to adjusting spice level on request, especially for dishes like pad kra pao or tom yum that are cooked to order.

Which dish should I try last, once my spice tolerance builds up?

Goong Chae Nam Pla is generally considered one of the most intense dishes on a typical Thai menu, and it’s the one most worth working up to rather than starting with.

Final Thoughts

Building up a spice tolerance in Thailand isn’t about forcing it on day one. It’s closer to leveling up: start with something like khao man gai or pad thai, work through the medium-heat staples like pad kra pao and tom yum, and only reach for som tam, larb, or goong chae nam pla once your palate’s actually ready for them. By the time a dish like tom yum stops feeling spicy, you’ll know you’ve genuinely settled into eating like a local.

Traditionally all the ingredients are pounded into a paste using a pestle and mortar. For the authentic taste hand pounding is recommended but for convenience’s sake, you can grind it in a mixer grinder to a thick paste. Use the quantity as needed, and the rest can be frozen later.

Instructions

Heat 1 cup of coconut milk until thick. Coconut oil will start to separate from the coconut milk.

Add the prepared green curry paste and sauté, stirring over medium heat for about 2-3 minutes.

Add chicken thigh pieces and stir. Add kaffir lime leaves, chicken stock, remaining coconut milk, palm sugar and fish sauce. Bring to a gentle boil and turn down the heat to a simmer. Let it cook until the chicken is fork-tender. It will take about 15 minutes.

When done simmering, add bamboo shoots and pepper and bring to a boil. Let it cook for a minute, and remove it from the heat. Add the Thai basil and serve it with jasmine rice.

Spices and vegetables make it tasty, and it becomes super nourishing when it’s balanced with chicken. Jasmine rice is the best accompaniment, but plain rice with a wedge of lime also works nicely.

Thai salad Som Tam originates from North-East Thailand. There are a lot of people around the world who enjoy this comfort dish these days. Simple, healthy, and flavorful, Thai Papaya Salad (Som Tam) comes together in minutes. A spicy and tangy dressing is poured over crispy raw papaya and colorful vegetables. This is a spicy, sour, sweet, and salty dish that is light and tasty. The crunchy texture of every bite is the best part of this salad.

When people want a light, flavorful salad, this salad is their go-to favorite. The delicious blend of flavors and textures makes it refreshing and tasty. Remember to buy unripe green papayas with a dark green color and a firm texture.

The vegetarian version of Som Tam Salad is preferred by most people due to its absence of pungent fish sauce. A spicy and sour dressing is made by combining sweet chili sauce, vinegar, a green chili (roughly crushed), lime juice, and soy sauce. A handful of mint leaves will add a touch of freshness to the main salad, which is composed of shredded green papaya, carrots, cucumbers, and carrots.

The mouth-watering Som Tam Salad can be prepared in just a few minutes by mixing the vegetables with the dressing and seasoning. If you want to add some richness to the salad, add some crushed roasted peanuts on top while serving.

There is nothing more scrumptious than a sweet and spicy salad with shredded unripe papaya and a spicy dressing.

Bangkok is not limited to night clubs, massage parlours and yoga centres. There are a lot more which one may experience on the land of Bangkok and a trip to Chiang Mai is one of them. Trip to Chiang Mai, Bangkok is one in a lifetime experience. It is a place which welcomes you with giving a glimpse of the Thai culture and then provides you with some of the unique and most adventurous activity of lifetime.

Play with the Magnificent Giant Amidst Mother Nature

Chiang Mai offers you a visit to the elephant sanctuary. Unlike the other parts of the country where you enjoy the ride of these giant creatures of mother nature, here you get to play with them. Being protective towards these beautiful being of the mother nature, the sanctuary offers you to mingle with the elephants, bath with them, play with them, shower love on them and as a return token you get to see the very pleasant and loving side of them. They reciprocate love with love and have you ever imagined getting a beautiful shower and a smile from an elephant. Believe me, it will make your day and every moment you will think about it there will definitely be a smile spread on your face.

Endangered Gibbons welcome you while you take a Tarzan Ride

Talking about the adventurous experience offered by Chaing Mai, the zipline of the virgin rainforest gives you experience of the one of Asia’s longest Zipline Ride. Amidst your Zipline ride, you witness the beauty of the dense forest along with the endangered Gibbons who resides in the canopy of the forest. The breath-taking view of the forest becomes a treat for eyes when combined with the adrenaline-rushing Zipline experience.

Thai Food Celebrating Thai Culture

Sitting on the
floor, flooding your mouth with yummy Thai food and enjoying the show of
traditional Lanna entertainment is something you would never like to miss while
in Chiang Mai. The beauty of the cultural blend with the adventurous day will
satisfy and make your Thailand trip worthier. Enjoying the food alongside
listening to traditional Thai music will make you feel the essence of the land.

Ever heard of Walk on a Waterfall?

Bua Tong sticky waterfall is an hour and a half ride towards north from Chiang Mai gives you an unusual experience. The large spongy rocks around the waterfall gives your feet a solid grip, allowing you to climb up the waterfall into huge, dense tropical forest. Whether you dare enough to taste the adventure or not, the scenic beauty of the fall makes it worth visiting. The white spongy rocks make the adventure a bit easier for you as the provide a good grip to your feet.

The old city of Chiang Mai

The city is said to
be more than 700 years old and a trip to Chiang mail isn’t completed without
dropping your foot in the place. With the guide telling the history of the
place you glide around the back lanes and byways of the Old City. The beauty of
the city is worth watching when the story behind each brick is unfolded by your
guide. The ride is 100 per cent safe as when required, your guide stops the traffic
for you to cross.

No, this isn’t all, there are yet many adventures and sight-seeing which Chiang Mai provides you but above-mentioned are a few which should top the list while you plan a visit to the place. So, get ready for your next vacation to Chiang Mai.

Loved this post? Why not Pin it for later!

Being a hardcore foodie, I love almost all types of food, but Indian food and Thai food are my absolute favourites. Weighing both the cuisines have curry but how the two cuisines differ. I thought what would be best then to draw out the differences in the curry and see which curry wins.

The word curry initially originated among the Tamil
people of India and Sri Lanka and was freshly used to explain the combination
of a variety of meat and vegetable dishes that were cooked using a rub of
spices mixed without sauce. One of the major ingredients in Indian curry is the
use of curry leaves while making a blend of spices. From here started the
journey of curry and spread across all of Asia keeping Thailand in particular
and its famous Thai curry. In Thailand, the Thai curry is made with a
curry paste that could be either red, yellow or green that is mixed with
coconut milk to form a thick sauce.

Different or
Similar

Indian curry is a blend of spices that contains turmeric, cumin, coriander and garam masala which may or may not be stewed with curry leaves which is not as heavy, unlike the Thai curry. Thai curry is all about using a variety of curry pastes, mixed with coconut milk, to form a rich sauce in which meat or vegetables are boiled. But let’s just cherish what they both share, originally, is the abundance in the flavour of tantalizing spices.

Thai curries are created using the principle ingredients
that is the use of a curry paste and heavily influenced ingredients such as
ginger, garlic, lemongrass, galangal (Thai ginger), and chilli peppers that are
quite dominant in taste. An interesting way to differentiate the Thai curries
is through the chillies that have been used for cooking. Chillies define the
colour and the spice level, playing a major role to check the hottest, and red
curry uses red chiles to give it a milder heat and the unique red colour.
Yellow Thai curry contains turmeric and a more moderate amount of chilli making
it the lightest of all Thai curries.

There
are indeed few ingredients that are shared between the two cuisines such as
ginger, garlic, turmeric, chilli peppers, and cilantro.

Both the curries have its level of spicy but the Thai curry relies heavily upon the coconut milk whereas Indian curry is all about the spices and far less saucy and the taste is miles apart. If Indian food gets thick, it tends to rely heavily on clarified butter or ghee and cream in many dishes, whereas Thai food has no substance of dairy products.

Eventually, these two nations may share the name
“curry” but are irrelative and don’t taste similar at all. Both the
curries have the peculiar distinctions that make them unique.

To decide which is the best; one has to go on
an appetising journey and decide for themselves.

What is your
choice Indian curry or Thai curry?

Is ‘Nightlife’ and ‘Bangkok’ the main things that struck a chord when you hear the word ‘Thailand’? Thailand is a nation rich with culture and convention, and one of the greatest parts of its legacy is the flavorful nourishment from the area. What’s more, as it occurs, Thai nourishment is one region where I couldn’t hold myself from investigating. Broadly sound and flavorsome, it makes them astound alternatives for the two vegetarians and meat darlings. While you will get the best Thai nourishment in Thailand itself, some of you might not have enough pocket change to arrange for that amazing outing right now. Likewise, I don’t intend to drag you with a supposition, simply delighting in some whataboutery. So I bring to you… *drumroll please*…. a visit to Bo-Tai which is one of my preferred Thai café in Delhi NCR.

Is ‘Nightlife’ and ‘Bangkok’ the main things that struck a chord when you hear the word ‘Thailand’? Assuming this is the case, at that point, it’s a great opportunity to extend your outskirts. Thailand is a nation rich with culture and convention, and one of the greatest parts of its legacy is the flavorful nourishment from the area. What’s more, as it occurs, Thai nourishment is one region where I couldn’t hold myself from investigating. Broadly sound and flavoursome, it makes them astound alternatives for the two vegetarians and meat darlings. While you will get the best Thai nourishment in Thailand itself, some of you might not have enough pocket change to arrange for that amazing outing right now. Likewise, I don’t intend to drag you with a supposition, simply delighting in some whataboutery. So I bring to you… drumroll please…. a visit to Bo-Tai which is one of my preferred Thai cafe in Delhi NCR. I will cover the length and broadness of Thai contributions so how about we get eating!

Bo-Tai proceeds with the solace nourishment line, and you’ll discover well-known flavours and soul-fulfilling blends over every one of the dishes. I began with the sheep serving of mixed greens, which has daintily cut sheep shallow singed lamb bested with sweet and bean stew Thai dressing. Even though the lambs didn’t convey its very own lot season and made them imagine that chicken rather may simply have been a superior alternative, keeping the plate of mixed greens lighter, the dressing alone is done truly well, making it a serving of mixed greens worth difficult. The steamed prawns were a top pick, gently spiced and the tenderest meat inside the shell. The Thai duck enclosed by hotcakes has bits of duck meat absorbed somewhat sweet Asian dressing, enveloped by flapjacks extraordinarily made for Peking duck and got from China, and is a fun one to attempt. The minced chicken pockets, bested with kataifi and bean stew oil sauce is difficult to turn out badly with and is an all-rounder with all components pandering to the vibe great tastes. Furthermore, for the individuals who love their fish, the mussels serving of mixed greens and buttered scallops are unquestionable requirements.

Lavender bloom has been utilized to offer to shade to the skin of the corn and water chestnut dumplings. Being non-vegans we altogether savoured eating it with an absolute necessity love for veggie lovers. The extravagant veg tempura cakes for all the vegetarians. The tempura hitter is cooked in paniyaram container with ginger and other Asian flavours. It is moulded like an open crude egg and served in a home-like presentation. This open egg moulded tempura player is loaded up with lemon, sugar, chillies and vinegar dressing. The dressing and mayo give season as well as complete the crude egg look by giving it that liquidy feel. Full checks to the chef for expediting this creative mind the table!

Without a doubt, Bo Tai has everything going in support of its zest. The area with the lovely Qutub Minar standing tall out of sight, the quiet setting on the porch and music that gels well with the spot , the best of the fixings, creative mind of the culinary specialist and barkeep, Bo Tai has everything to turn into all the rage for an easygoing dinner or a sentimental night. Bo Tai is a perfect spot to stir all our senses.
