  • 1 1/2 tbsp vegetable or canola oil
  • 1 to 3 Thai bird finely chopped chili
  • 2 medium cloves garlic
  • 1 large egg
  • 4 oz (115 g) selected cooked crabmeat
  • 2 scallions, thinly sliced
  • 2 tsp Asian fish sauce
  • ground white pepper
  • 1/4 cup minced fresh cilantro leaves
  • 1 Japanese cucumber thinly sliced
  • 1 lemon, cut into 4 wedges

Add another 1/2 tbsp oil to the pan. Break the egg and put it in the oil and add a little salt. Break the egg into small pieces and toss the egg and rice together.

Add crabmeat, scallions and fish sauce. Toss to combine and cook, tossing and stirring constantly, until crab is heated through and scallions are lightly softened, about 1 minute. Add white pepper and salt as per taste.
