Yellow Thai Curry Dish This is a dish from Thailand, but nowadays it is popular everywhere. It is a vegetarian dish made from green vegetables. It is very easy to make, if you are also fond of Thai food then definitely try this curry.
- Ingredients of Yellow Thai Curry
- table spoon vegetable oil
- Green banana, sliced (halved)
- 4-5 baby potatoes
- 3-4 baby corn
- 2 tsp rice wine vinegar
- 1 tsp brown sugar 20 grams
- Eggplant
- 1 cup beans
- 1/2 cup cold green peas
- 1 cups water
- 1/2 tsp red chili powder
- coconut milk
- fresh lemon leaves
- Ingredients for making salt paste:
- juice of 1/2 lemon
- 2 garlic cloves
- 2 tsp vegetable oil
- three leaves kaffir lime
- 1/2 stock lemongrass
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- medium onion
- thai ginger
- 1 handful fresh coriander
- How to make Yellow Thai Curry
- Mix all the ingredients to prepare the paste and grind it.
- Soak potatoes, small potatoes and raw green bananas in salted water for 10 minutes.
- After this, remove the water from it and sprinkle salt and red chili.
- Heat one tablespoon vegetable oil in a pan.
- Add seasonal vegetables and fry for a minute.
- Then add the freshly prepared paste to it. Mix well. Then add half a cup of water to it. Mix and cover the pan. Lower the flame and cook the mixture for about two minutes.
- After this add chopped baby corn, coconut milk, rice wine vinegar and brown sugar. Mix and add brinjal, beans and chilled peas to it.
- Stirring the mixture well, add little more water to it. Cook till the gravy thickens. Garnish the curry with finely chopped kaffir line leaves and serve it with steamed rice.
